"After all the buzz, I decided to visit Uncle Henry's Tamales at 4358 E Lucas in Beaumont, Texas. The tamales were fantastic, but this time I opted to try the cracklings, and I was left disappointed. They smelled and looked great, but to my surprise, they were stored in a plastic Ziploc bag, which is a huge mistake when it comes to cracklings. As a result, they turned out soft and gummy – just not appealing at all. It’s clear there’s a lack of knowledge about how to properly store cracklings for sale. Anyone who enjoys cracklings knows that once they’re cooked and cooled, they should be kept in a paper bag to maintain their crispiness. The paper bag keeps them fresh and crunchy. The best cracklings I've had so far have been at the fair at Ford Park with Southern Fried Krackling; they know what they’re doing. So if you're looking for good cracklings, Uncle Henry's isn't the place to go. Shaking my head."
