"Southpark Mall in Strongsville, which is only a 4-minute drive from the Ohio Turnpike, is a frequent rest stop for me on long trips on the turnpike. It's the largest retail mall in the state and allows plenty of opportunity for walking. On the outskirts of the mall is CoreLife Eatery, whose menu lists three items marked vegan: (1) sriracha ginger roasted tofu green bowl, (2) sriracha ginger tofu and ancient grains bowl, and (3) shiitake mushroom and roasted tofu vegetable broth bowl. Many additional toppings (hummus, falafel) and dressings (balsamic vinaigrette, carrot chili vinaigrette, Thai cashew) are also clearly marked vegan. I tried the sriracha ginger roasted tofu green bowl, which includes baby spinach, shredded kale, roasted organic tofu, broccoli, carrots, sprouts, basil sriracha, carrot chili vinaigrette. The spinach and kale were fresh and crisp. I've only had one meal there, but I will be back for more on turnpike trips."
