"Em’s pho has been at the top of my list of pho restaurants since I first went there about a year ago. I recently went to Em’s after not having been for a few months, and it seems they have changed the rib-eye meat they use in the rare ribeye pho. This was a pretty big let down to me as the ribeye they used in the past was the thing that set Em’s apart. It used to be very tender and obviously of a high quality. This time it was chewy and just seemed of a lesser quality than before. Don’t get me wrong, it is still a good pho, but it’s about the same as all the rest now. Maybe they switched the meat in an effort to save money and protect margins (since the price of doing business has gone up), but I for one would gladly pay a few dollars more for the better quality that Em’s used to have."
