"First things first. My dad mom was Mexican and his father Spanish. The doing in the home was the best ever. I know what excellent carnitas taste like and perfection in the preparation. In search of the best tasting Mexican food near me and it being one of the last places to try, I discovered THE ABSOLUTE BEST! When we think of getting food out we usually just think if the food is good or not. I've been going there mostly on Friday nights for almost a year. This establishment is popular, it's busy, it's festive, it's authentic inside and holds its roots to its culture very well. Their is music and usually a little bit of a line. While I stand in line I'm able to observe the full operation. I realized that every single time I've gone in there I'm so very impressed at their operation. That being said not only is the food excellent but this establishment is a very well organized operation. I've been in line behind some rude guest and I've observed the employees responses. Absolutely professional! Great smiles I'm greeted with when it's my turn and when I leave. Then energy behind the service counter is impeccable. The multitasking by all individuals is far and beyond. Seriously, Instead of looking at my phone while waiting in line I like to access the establishments operational skills. This says a lot of one's business. I always order via door dash thank you door dash) and I go and pick up. I had thought that the to was always added on and this Friday after being handed my food I realized the tip was never there. Oh my! I made up for it. IT'S NOT JUST ABOUT MY BURRITO OR TASKS OR FOOD! IT'S ABOUT THE HUMAN. IT'S ABOUT THE HUMANS DOING ALL THIS WORK ON A FRIDAY NIGHT SO I CAN GO BACK HOME AND WATCH MY FRIDAY NIGHT MOVIE WITH MY FOOD! NO! IT'S NOT! IT'S ABOUT THE HUMAN BEINGS AND OUR INTERACTIONS. The pupusas are fantastic and seasoned just right. However, it would be nice to have a bit more curtido to accompany them. The Chile Verde was alright, but I prefer to have more verde sauce to mix with the rice and beans.
