"Now this is real Mexican/Texas Mexican food like what I ate growing up. It’s always these small town restaurants that have the best version of Texas Mexican food. Nothing fancy. No made up, watered down or remixed versions of good old Tejano food.It was breakfast time and I was traveling through, so it was a blessing to be the first customer early in the morning. I ordered the carne guisada with two eggs over easy, potatoes and refried beans with flour tortillas. This is how I know whoever is cooking grew up in Texas or learned how to cook from a Tejano. The carne guisada tasted like my mom or grandmother made it. I went to town on it and before you knew it, I was cleaning the plate with my last piece of tortilla, just like I would at home. Not to mention the salsa verde was hot!The coffee kept coming and the waitress didn’t let my cup dip beneath halfway. The restaurant was quiet when I entered but soon was packed with the hustle and bustle of peopl getting their morning started with a hearty breakfast. If you are ever in Refugio, TX and craving a hot, hearty Mexican breakfast the Tejano way, you can’t go wrong coming to La Ribera!P.S. They are Dallas Cowboys fans, so you already know!!! How bout them Cowboys!!!"
