"I want to begin by giving a big shoutout to Leidy, our server, who truly enhanced our experience. The boutique hotel where the restaurant is located is a hidden gem—one of the most beautiful spots in Santa Fe. They have really paid attention to detail, and restaurant Amaya lives up to that standard. Everything was exceptional, with the exception of one of the two elk medallions on my plate, which was a bit overcooked and tough; the other was fantastic. My wife and I both loved the Hacienda Mojito, which was a great deal, especially coming from longtime Miami residents. I highly recommend the Chimayo Soup; the mild chile provides a surprisingly nutty flavor at the end, and the queso fresco on top adds a salty touch and a wonderfully stringy finish. It was DELICIOUS! The sesame-crusted salmon was perfectly executed and served on a bed of risotto, which I found phenomenal. We also ordered the Cobb Salad, and I have to give them credit—the salad was super fresh (no wilted vegetables), and the light, fruity dressing complemented it wonderfully. My wife typically only orders Crème Brûlée for dessert, and although I rarely try it because I find it boring, this one was the exception. It wasn't too sweet and had the creamy consistency you'd expect from custards or natillas. They clearly know how to craft desserts; however, I prefer my dessert in liquid form—specifically, Porto. Their Fonseca 20-Year Porto hit the spot and was the perfect way to cap off a wonderful meal. I wholeheartedly recommend this restaurant!"
