I decided to try the rabbit bo hue (spicy beef noodle soup), and I’m glad I did! The dish featured tender beef pieces and thin slices of Vietnamese ham, all combined with fresh mint, crushed cabbage, sliced jalapeños, and a splash of lemon juice—it was simply amazing. However, the real standout was the broth, which was incredibly fragrant and complex. It was perfectly balanced with lemongrass, cilantro, and loads of umami, without being overly spicy. I’ll definitely be returning soon!"
