This restaurant covers everything Mexican food, but a mole of this caliber is not found in most small-town OkieMex joints. I haven’t tasted anything like it in the fancy chain restaurants. The mole is a rich semisweet, thick sauce with chocolate, spices, maybe nutmeg, clove or cinnamon. A complex flavor sensation, served over three shredded chicken enchiladas. After wiping her plate clean with the last little bit of tortilla, my wife proclaimed the meal to be “scrumptious.” I tasted of the mole. It was Wow! Artisan and decadent. Not for me though. The closest I get to eating chocolate on chicken is a chocolate covered Cadbury Easter egg.I had the Camarones a la Diabla. Shrimp covered in a rich spicy sauce hand crafted with the same quality and attention as the dark mole. Shrimp, onion slices and the bright red flavorful sauce. Guacamole and rice on the side. Very good. I’m coming back for the sopes though. Damn they look good.This restaurant building has under gone needed interior remodeling since we were last there in 2018. The previous mediocre Mexican joint that operated here, has been exiled to the east end of town. Pueblo Viejo is still doing remodeling on one of their big dining areas. They have several large rooms.The service matches the quality of their food. Staff was cleaning when we walked in and still cleaning when we left. It is a very comfortable large restaurant. What a treat to find in Cushing Oklahoma.Well Done!
