Even the rice sometimes tastes less than fresh, and the Japchae is too soft, giving the indication its overcooked which takes away from the overall experience. A significant area for improvement is the sauces, which often lean too sweet. This isn’t a matter of culinary style but rather an adjustment that could be easily made to suit a more balanced flavor profile. Reducing the sweetness would allow the natural flavors of the dishes to shine through and enhance the authenticity of the cuisine. Finally, it would be wonderful if the food were served at a hotter temperature consistently. Lukewarm dishes tend to diminish the enjoyment, as warmth brings out the best in flavor and texture, especially customary of asian cuisines.
