The food around here can be pricey and underwhelming, especially near Tourist spots, but Co Ba offers elevated Vietnamese cuisine that really stands out. As a Vietnamese American, I know some might hesitate, thinking "elevated" means less authentic, but frankly, I dislike the stereotype that Vietnamese food has to be cheap or low-end. The food here is tasty, with all the classic dishes you’d expect: pho, rice plates, vermicelli bowls, and banh mi. The banh mi even comes with fries and a bowl of pho broth on the side. One surprise for me was their salty lemonade—a nostalgic childhood favorite that's rarely found because of the time it takes to ferment the lemons properly.
