"As soon as my friend and I walked in, I was instantly transported back to the coastal village I stayed in while in Venezuela. The enticing aromas of the food, the lively music, and the laughter and dancing of families gathered in the back took me right back. Naturally, I knew I had to have a cachapa! This delightful treat is a sweet corn pancake cooked on a griddle and filled with queso de mano. To describe the cheese, it’s reminiscent of a slightly firmer and saltier version of fresh mozzarella. I can’t express enough how wonderful it was!
