"My wife and I are vegan, we are very fond of tapas, and have enjoyed good vegan tapas in France, California, Atlanta, and Asheville, NC. It's not that hard, right? Just throw some veggies on the grill, maybe some mushrooms, polenta, serve them up with a dish of olives and some crusty bread... We were quite excited about a tapas bar coming to Knoxville. We had dinner at Babalu and were very disappointed to find one of the least vegan-friendly menus that we have experienced in Knoxville. The margarita mix has egg whites in it (!). The sauteed greens have bacon. The beans and rice are made with chicken stock. You get the idea. We wound up having a "meal" of modified margaritas, guacamole, and hummus. Not a very balanced meal, and we really missed green veggies. To top it off, the restaurant was very busy and very very loud - tall ceilings with no noise baffling. If you eat a vegan diet, you should probably skip this place."
