"This was the third and final time that I’ll be dining at Timpano’s. I went to celebrate my birthday with my brother because I have always held the restaurant in high regard. The first time I went was about a year ago and everything was great besides the parm to table experience. The pasta was undercooked, not aldente, cold and almost flavorless. The rest of the meal was so fantastic I didn’t even care that their flagship dish was subpar. The second time I went was good, but not as great as the first time. The food was simply inconsistent with the depth of flavor and texture that was delivered the first time. Nothing that would keep me from not returning. The same can’t be said about this final visit to Timpano’s… We were seated quickly and greeted by our waitress who asked us for our drinks and said she’d be back to take our order as usual. It took about 5-10 minutes to get our water, not a great sign. But again, I liked this place so I thought nothing of it. We ordered our appetizers which were half a dozen oysters, two orders of calamari, two Caesar salads, burrata, and octopus. The burrata was very sour and you could taste the plastic wrap and baking sheet that it was stored in. Not the freshest tasting cheese I’ve ever had. The first calamari was cooked well and was hot, the second was over cooked and cold. The first Caesar salad had plenty of dressing on it and the second did not. Also, the Caesar salads were full of kale stems. The octopus was overdone and tasted like pork cracklings from a gas station. The best food we had the entire night was the raw oysters, the only thing on the menu that didn’t require any work from the kitchen besides shucking them. I think this says a lot about how things were run this night. For the main course we had three orders of pappardelle which was supposed to have ground short rib and prosciutto. The pasta was so poorly cooked that it was truly inedible. It tasted like it came from a can. The manager could care less."
