"While I appreciate their tenacity at trying to continue serving food (take out only no dining in at the moment during a pandemic I must say that our dinner last night left much to be desired. My husband ordered the Korean Kimchi Beef Stew. The meat was not fit to serve a diner in this, a 1st world country, and the rest of the overly salty broth was filled with unidentifiable items (I was able to identify the brain like kimchi, some cabbage and some sort of long tubular solid pasta thing that I still have not a clue what it was . My tofu Pad Thai was ok and I liked that it came with some steamed veg. The real kicker was the wait time. I ordered online at 7:16pm with a pickup time of 8:04pm. I decided to give them an additional 15 20 minutes as last night was Valentines Day and I had assumed that they would have received a larger than usual demand for take away orders for a normal monday. I might have wanted to give them an extra hour ... I waited in the restaurants' stairwell with other hoping to be diners (while checking periodically on my illegally parked car I had brought my 15 year old daughter to keep me company and she remained in the car probably why I didn't get a ticket or towed... until 9:05pm when I was handed my partially cold dinner. The people working were VERY kind and apologetic but when I got home and started eating dinner at 9:20 I forgot all about their extra efforts. My valentine was disgusted by his meal! Egad! May not be going back..."

"The service was absolutely terrible it was No room for accommodations. Waiter Taylor had a rude tone and attitude towards our party. The food was really good but poor quality drinks and wouldn’t allow any changes. Her attitude and rudeness ruined my birthday night. And as I WAS LEAVING THE MANAGER PULLED ME TO CHECK ME ABOUT THIS REVIEW I WROTE WHILE IN THE RESTAURANT. Exact words were “i was listening in the other room and Taylor was not rude. Just because you don’t hear what you want does not mean she was rude”. I replied and stated this was MY EXPERIENCE and I am very valid in my experience. I was very shocked this was happening and he was willing to argue back and forth with me on my experience. It was Very unprofessional and uncalled for instead of apologizing he insisted on checking me on my post. Our party still treated Taylor with respect and thanked her countless times while she served us. They were not accommodating, I had booked a reservation for 6 people and forgot to include myself (dumb on my part) and Taylor was not willing to accommodate at first asked manager for permission and he allowed it. Then I ordered a coconut drink that was very heavy on the coconut and I asked to get it replace with something else and was told no due to the drink description stating it had Coconut. Which is understandable but people don’t always like their food and drinks and many restaurants are very accommodating and make sure you leave satisfied."

"What a great meal. We came to celebrate my parents 49. Wedding day and staff, food, drinks and ambience were excellent. My sister coordinated Max (one of the managers) and Matsuhisa Vail took care of everything. From a custom printed menu to a large round table overlooking the Vail Mountains to bring our party of 10 (with two children under 4) and fantastic waiter Nathan (and many others who have helped bring / bus food and drinks) this was what a nice meal should be. We had so much good food. We talked to Edamame and Shishito-Pfeffern. The paprika came with a delicious diving sauce. The yellowtail Jalapeno was perfectly cut and tenderly dressed with Yuzu Soy. The other whole star was the bincho truffle with miso, chives and yuzu Dressing. Each piece has a generous amount of truffle at the top for a satisfying bite (and we have two pieces each) The cocktails are worth mentioning. My sisters enjoyed the gardener with gin, Serrano pepper, Cilantro, ginger and lime. I personally loved the whisky sours. I think it has Japanese whisky, something that made it pink in color and just a perfect mix. You have a huge list of sake, wine, champagne, etc., so you have a lot to choose. We tried three of their salads and the mushroom was the best followed by spinach and hearts of the palm. The Colorado lamb dogs were well cooked with a selection of antichucho sauce (smoky and a little spicy) or teriyaki (good, but sweet). The Alaskan Black Cod Lettuce Cup was good, but no favorite. The Japanese eggplant was also good, but the sauce used is very sweet. The nitrile and rollers were a nice way to finish the meal with super fresh fish. That was my most expensive meal of the year and the best. To family, good food and Matsuhisa!"
