"Tirelesss work horses. I use the equine analogy out of affectionate respect. Out of wonder. The night I was there, it was raining. Biblical. Why mention it? Because wait staff were braving buckets, ferrying dishes empty and full between buildings by way of a narrow sidewalk proving instant showers per inch. I saw their stress and tension teeming down their drenched cheeks framed by rivulets of careworn hair of the evening and felt for them. But it wasn 't that they were victims of a heartless restaurant. I rather got the sense all working shared a common Kingston commitment to quality. One tiny detail? A floating greeter checking on us all delicately with cheery concern. I met Billy Costello 's brother earlier that weekend Billy the pride of Kingston as the national welter weight boxing champion. Half Sicilian and American Indian but every bit a son of Kingston, Billy 's brother exuded pride in doing his job well, a job others depended on him to do well. And so it was with his veritable Kingston sister of spirit that my Savona waitress exuded effort and compassion far more that rain soaked night than you 'd see other places. If I didn 't live in Jersey, I 'd frequent this place weekly both for my divine waitperson and for the towering quality of food. The pains she took after I gently groused about a glass of water arriving too late to help me with my Barrette 's esophagus (which I didn 't mention) was touching. Out she came with a wine box of mind numbingly exotic teas for me to choose from. She wisked out my tea ensuring milk accompanied. She doted on me as to say you should judge me or anyone here by a late arriving glass of water. Judge us by so much more. And so tonight, nights later, I 'm feasting on their veal parmigiana that weathered the trek back and num numming like a happy shark on their doughy bread bordering on pastries for delicacy. And all this is the tapestry of an eatery woven from strands of a caring professional staff, dedicated talented cooks no one sees and their determined diligence to the extra mile right down to finding a bag to carry my belly booty because to jersey like some epicurean pirate. So... go. Go. I won 't further embarrass these exceptional souls by more flattery I 'll leave that to you when you go. One issue: loud. But ....think. Empty eateries are graveyards and thriving dining jewels are cacophonous hives of the contented and sated. This is such a place. And parking out side uses Flowbird!"
