"Stopped into Popover Bistro Bakery in Simsbury and grabbed some take out. Hubby is vegan we chose this restaurant after checking the menus online and seeing all off the choices they offered for him. I went with the veggie hash it was loaded with sweet potatoes, carrots, Brussels, broccoli, zucchini sautéed onions and wonderful roasted tomatoes. All of the veggies were perfectly cooked not a one that was too hard or soft. The seasoning and roasted tomatoes were perfection. I of course had to have a popover. Perfectly crisp outside light and airy inside it conjured up childhood memories of popovers made by a favorite aunt for holiday dinner simply wonderful. The very dangerous bakery case is located right by where you order, I glanced over long enough for the carrot cake to start calling my name. Who am I to resist? Moist and flavorful with just the right amount of frosting well worth every delicious calorie. My husband opted for the Vegan Power bowl, shredded kale, quinoa, toasted chickpeas, roasted broccoli and cauliflower, shredded carrot and falafel with pomegranate dressing. He absolutely loved it. We will definitely be back. He noticed they have a vegan waffle last time he found one of those at a restaurant we were in Brussels, Belgium"
