"We were skeptical when we arrived at Wild Caddis as it is located in a hotel right by the highway We were pleasantly surprised when we walked in we were received with a nice greeting, the dining room was welcoming and simple, the waitstaff was friendly and attentive. Most of all though the food was excellent. We started out with a pork belly over risotto appetizer and a simple red beet and hazelnut salad both of which were delicious. Next we had Bison New York strip which came perfectly cooked medium rare with fresh roasted carrots and the requested Pommes Dauphinois as a substitute for sweet potatoes which I don’t like. The lamb rack was one of the best my husband claims he ever had and it came with carrot batons and a nice gratin of rutabaga and celery root. We couldn’t help but end with a desert , chocolate pot de crème which was fluffy and flavorful, covered with a crunchy crust and whipped cream and fresh fruit (one of the best I ever had) and a wine poached pear with vanilla ice cream and cookie and hazelnut crumble Overall I can highly recommend this restaurant the best dinner we had around big sky!"
