"This is another great find thanks to Yelp! I am running a project in Scotts Valley and it wasn't too far of a drive to come grab a sandwich from Seabright Deli. Since I am not a local it's an easy spot to miss but Waze got me there just fine. Apparently there is seating out back since there is no seating right now inside of the deli. I didn't check it out because I had to get to the office, so I just ordered and took my food to go. I was there close to 2, so it wasn't too busy. There is a walk up window and I placed my order and had my sandwich within minutes. The lady that took my order was pleasant and the man that brought it out was very upbeat and friendly. I ordered the Giant Dipper, chips, and a can of Coke which came to $25.14 with tip. It is a bit high but the ingredients were fresh and there was a generous amount of roast beef. I ordered The Giant Dipper. As I just mentioned, it had a generous amount of extremely tender and flavorful roast beef and was nice and cheesy. Unfortunately, I was so hungry I dove in and didn't get a picture of it. The meat was delicious! It was melt in your mouth tender. You could easily bite into it and tear off a piece from each slice without having to do a tug of war with your sandwich. The onions were fresh. They were cooked but still a little bit crunchy, which was alright and still worked with the sandwich. I probably would have liked them cooked just a bit longer though, so they were more caramelized. There was plenty of provolone to make it gooey (in a good way) and lots of fresh mushrooms. The mushrooms could have used a little more seasoning. The roll was soft and fresh. Everything blended well together but all of that juicy, tasty meat piled high on the sandwich just stole the show. With what I read in other reviews, and the menu description, I thought the sandwich came with au jus. However, I didn't receive any. Unfortunately, I didn't look until after I made it back to the office so it was too late. Nonetheless, I did really enjoy this sandwich and it can stand on its own without the au jus. It was a cheesy, fresh, tons of yummy meaty goodness sandwich. It's also a lot. I barely finished half of it. I am craving the roast beef just writing about it now. I will definitely be back to have another sandwich made with it but I also want to try their other sandwiches. With that level of freshness and quality I am sure I won't be disappointed."
