"One of my main issues was that the Tonkotsu broth resembled a French broth more than a rich, creamy tonkotsu broth you'd expect from an authentic ramen shop. If a ramen restaurant can’t get the Tonkotsu broth right, it really defeats the purpose of visiting.
Another complaint I had was that the pork chashu consisted of just two small strips that tasted more like odd bacon than proper chashu. If you're going to offer upscale ramen, the pork chashu should be prepared correctly and should truly enhance the meal.
I would go so far as to say this was the worst upscale ramen I've ever had. I've experienced worse ramen before, like at a food court or from instant packages, but never from a place that markets itself as a ramen specialty shop."
