"Hexagone (1-Michelin starred) and Histoires (2-Michelin starred) are both owned by chef Mathieu Pacaud and situated in the same hotel building. Histoires is more private (6 tables only) than that of the much bigger Hexagone; like a speakeasy you pass though a hidden door before entering into the intimate beautifully decorated dining area. We had a nice private booth overlooking the interior garden area.With our cocktail the team brought out a significant amuse bouche - some placed on the unique plates on the table and then more on the stand worthy of a high-tea. You do not get this sampler if you do not get a pre-dinner drink. When we dug into this we decided to go with the 4 course tasting menu rather than the 10 course. The menu changes based on the season, in March we had a melt in your month asparagus starter, wonderful turbot, magnificent bresse chicken and an unbelievable selection of desserts. When you see all the food the fixed price is very reasonable."

Unless you are earning serious money this is a special occasion restaurant. Everything from decor through service to food was outstanding. Great fun but, on our budget, lunch cost about the equivalent of six meals at a good bistro.

Histoires is a more intimate restaurant with 6 tables only .Modern design, quiet atmosphere and fantastic food. Portions are fair, meals are innovative yet based on traditional recipes. Overall, it is a high level restaurant and it deserves it two michelin stars. The staff is friendly and discrete. There is only one drawback as one would guess, it comes at a very high price.

I went to this restaurant two days before New Year's. The restaurant was half-empty. Having had a dinner at L'Ambroisie the night before, I found a lot of the dishes to have similar touches. The saucing however was quite weak, and rarely pulled together dishes (such as broiled carrot and black truffle), and the Bresse chicken was no better than supermarket rotisserie standard. Was in Paris staying near Trocadero and a friend recommended. We had the Chef's table which looks onto the kitchen. It comes with a picture of Barack Obama and Francois Holland with Matthieu earlier in the year and a hand penned thank you letter. The menu has a number of broad options but the immense number of side dishes means that it provides only a general sense of what is to come. An amazing dining experience that matches exquisite dishes with a sense of theatre. Great wine list and service. All in all a memorable evening. Food at its very best.

This restaurant must be viewed in comparison with other high-end restaurants. In that perspective, it was a little bit disappointing. The dishes was presented both artistically and spectacularly. That said, several of the dishes was actually quiet bland. We have been dining on one star Michelin restaurant that in fact has given us a more gourmet experience and value for our money. Nonetheless, this is of course a very good restaurant. We dinned in the histories department that had a pleasant and tranquil atmosphere. The staff was attentive and friendly.

Many thanks to the young yet renowned and rewarded Chef M. Pacaud that master the art of French cuisine. We just experienced a truly unique and delightful evening of French cuisine. The location is in itself worth the trip and offers an authentic and intimate atmosphere. The wine menu is carefully selected and the cocktails constitute an interesting surprise!The food surpassed our expectations and Chef Pacaud lives up to his two Michelin stars. Every dish is a carefully crafted and balanced composition of taste, texture and esthetic that embodies the creativity and experience of the chef. And save some space for dessert! Despite the warning of our waiter that we needed to be hungry, we chose the €350 per person tasting menu. Very pricey indeed, but each course was scrumptious, and quite substantial. Very often French cuisine never tastes as good as it looks. But the chef here manages to keep a "grandma's goodness" feel about his dishes. They look quite beautiful, but you want to lick the plate afterward. Sadly, our waiter's warning was correct. Each course was so large that we regretfully had to skip the cheese course in order to make room for the seven desserts at the end of the meal. And the service was just wonderful - smiling faces who became trusted friends by the end of the evening. All in all, a memor...

The meal is a progression of notes ranging from subtle to bold. The attention to detail in the preparation and presentation of the food is impressive. The staff is knowledgeable, attentive and engaging. We had a wonderful time interacting with the staff and learning from their passion for the food. Each course had elements that were both familiar and novel but very complementary. The chef has an ability to layer flavors in a way the evolves as you savor the dish – much like a fine wine’s character evolving after opening. The turbot cooked three times was amazing. The meal ended with a “Waltz” of deserts – each special in its own right. If I had one comment it would be that the desert course...
