"In 2018 my husband and I discovered Proto’s the Longmont location and fell in love with their thin crust and innovative topping combinations. We were thrilled to see this March that there is also a location in Lafayette, and we recently gave that a try. My husband loves the Tomato Pie “Proto’s own red sauce, crushed Italian tomatoes, Kosher salt and oregano” . And no cheese! It is meant to be that way! My go-to pie had been the Ruby pesto sauce, mozzarella and feta cheese, Kalamata olives, and artichoke hearts. But at the Lafayette location I discovered the Pontiff – I think I may love it even more. No tomato sauce, but so many fresh flavors – olive oil, garlic, fresh spinach, roasted tomatoes incredibly flavorful! , mozzarella and feta. This is one delicious pie. We’ve also enjoyed the salads – particularly the Caesar and the Capri Salad “romaine, sliced ham, hearts of palm, and corn, tossed in extra virgin olive oil and balsamic vinegar” . We added a bit of feta and it was perfection – the crisp fresh corn really makes that salad. Just like the Longmont location, the Lafayette location has that incredible thin and crisp crust, and great service. We love Proto’s!"
