"Hmm. Something was off at this recent dining event. I brought my mother niece to celebrate my birthday. I made my reservation about a month ½ in advance and requested center seating and a seasoned server. At an early check in, the male manager looked over the notes but did not enthusiastically greet us or mention my birthday “Celebrating a birthday folks? Welcome,” etc.., etc..” Okay, whatever, older Vegas managers aren’t the most energetic greeters. Moving right along. The waitress who seems perhaps a better fit for Olive Garden per her removed demeanor attempted to seat us against a wall with no other patrons in close proximity. Yes please seat me against a wall for my birthday so we can be lonely on this special day. All I got was “We can’t guarantee a seat” which according to other reviews is not the case. You map out your reservations ahead of time and keep a few floats open. I advised we would wait, then another minutes or so to be seated. You should train your hostess to Maitre’D so the flow can happen vs random seating. The server jumped into the menu wno introduction. He was pleasant and quick and attentive enough but seemed to be drowning in tables receipts quite literally. The food itself was flavorful, and fresh. No complaints there, worth the prices in my opinion. After desserts I told the waiter “Thank you for making my birthday great.” He said “Oh!” and had no idea. He came out with a birthday plate and a small cookie assortment—after the fact. This restaurant has all of the ambience and sensuality to really be the hidden gem it once was. Tasteful music, thoughtful dining layout wprivate rooms, a good seemingly classy and wellheeled crowd, and a tasty menu that can tickle your appetite. A restaurant of this caliber should have a smooth operation and a nice flow that the conductor ensures is in rhythm. The steps of service need that proverbial Might be some months before I go back as we all expect more of a AAA rated place"

"There are very few moments of eateries where I ate that changed my outlook on food. With one hand I can count those moments: 1) Biergarten in Rothenburg, Germany 2) First Michelin Star experience at La Folie in San Francisco, CA 3) Horn BBQ in Oakland, CA. You can count this restaurant as number four. I came here on the first Wednesday night in August 2022 prior to the Silk Sonic concert. Throughout my 5 day vacation in Vegas I never expected to be a pescatarian. In terms of meat I rank in order beef, pork, chicken, turkey, duck, and fish. This restaurant would be my third night I had seafood for dinner. I didn 't know what to expect as I had seafood for dinner on Monday and Tuesday. I ordered several items. As this restaurant is named Yellowtail having two yellowtail dishes made sense. The first dish served was the Angry Yellowtail. I don 't like yellowtail that is cooked. Having a sashimi style raw yellowtail in sauce was a great way to start dinner. The angry portion of this dish is the sliced jalapenos that add a bite to the dish. The second dish served was the Akira Back Tuna Pizza. I 'm not a fan of seafood pizza, but the tuna pizza at Yellowtail wasn 't your ordinary pizza. The crackers act as a crust and had a buttery texture. The thinly sliced tuna with its seasoning tasted similar to prosciutto. Eating the Tuna Pizza at Yellowtail made me realize that it was one of the best six fish dishes I ever had. The third dish served was the eel sashimi. The eel wasn 't too boney or too oily. There was a meaty texture. The fourth dish served was the Yellowtail Scallion Rolls. Certain fish have different texture when they are either fried or raw. I 've had yellowtail deep fried and the texture is almost liver like due to its dark colored flesh. The raw yellowtail I ate at this restaurant is more of my preference. The fifth dish served was the Protein Specialty Rolls. At first the inside reminds you of a California Roll, but there is no imitation crab. There are three layers: crab in the middle, rice wrapping around the crab, and slices of fish on top of the rice. Bar none the best sushi roll I ever had. This dish is the other dish that is one of the six best fish dishes I ever had. I mentioned that the two dishes I had at Yellowtail were two of the best six fish dishes I ever had. This is how I rate my favorite fish dishes overall: 1) my mom 's home cooked catfish sinigang 2) Daing Bangus at FOB Kitchen in Oakland, CA. 3) Akira Back Tuna Pizza at Yellowtail 4) my dad 's home cooked catfish adobo 5) Steckerlfisch at Augustiner Keller at Munich, Germany 6) Protein Specialty Rolls at Yellowtail. Eating at Yellowtail dramatically changed my eating experience as two restaurants I ate at prior to eating here, I downgraded them one star lower than I normally would have. I didn 't have low expectations prior to eating at Yellowtail I just had no expectations. There were a couple of places I was more excited to eat at when I made reservations, but Yellowtail wasn 't one of them. After eating at Yellowtail I was blown away with my dining experience with their usage of cooking fish. The Las Vegas culinary scene has changed dramatically throughout the years. The city was known for its buffets in the last century. Then you had celebrity chefs with their eateries in the current century. I 've eaten at buffets, steakhouses, French, Asian, and Italian restaurants on The Strip. Of all the places I 've eaten in Vegas there 's no doubt the best place I 've eaten in Sin City is Yellowtail."
