"Once I arrived and found a table, I perused the menu, trying to decide what to order. I had planned on having coffee and something refreshing to beat the Texas heat, but I realized I hadn’t had breakfast yet and it was already well past lunchtime. I nearly went for their cheeseburger, but then a fellow patron overheard my conversation with the order taker and suggested the barbacoa grilled cheese with avocado. I also opted for a big red soda to round out my meal.
Let me tell you, I’ve had more barbacoa tacos than I can count (and trust me, it’s a lot). However, I had never come across this incredible creation until today. It combines everything I love: Texas toast, barbacoa, cheese, and avocado, all in one. I can honestly say that this twist on a taco staple blew me away. How had I never thought of putting those ingredients together before?
The atmosphere of Barrio Barista really added to the experience, making it even more memorable for me. They elevated the concept by crafting this amazing food combination that sets them apart from other local spots serving traditional barbacoa tacos (you know, with corn tortillas). Don’t get me wrong—I still love barbacoa on corn tortillas—but this grilled cheese is like meeting that special someone you know you want to be with for a lifetime. Seriously, you must try their barbacoa grilled cheese with avocado on Texas toast. I will definitely be returning and wouldn’t mind driving across town just to experience it again.
