"I will generally not eat sushi when I am out of town because I am always disappointed, this place has excellent sushi. we talked to the chef who grew up in japan, he was really in the technique and preparation of his sushi. he took care of the rice, a good sign for a sushi place, he also stressed knife work. the quality of the seafood itself was also pointed notch. they had fresh uni on the hand and it was brilliant, he put a hauch of wasabi underneath and it was a pleasant surprise. I was in japan and while I'm not an expert, the concern and the thought that here went to sushi very similar to what we experienced in japan is to find this very difficult in the states with their standard sushi connections."
