"I tried the Cajun fries, which were decent. They resembled French fries topped with what seemed like brisket (though it mostly tasted like pot roast) and cheese sauce. I'm not a huge fan of poutine, so my opinion may not be the most helpful, but I didn’t particularly enjoy the combination; it was quite salty, though I do like salt.
The chicken sausages were good! My only complaint is that they were a bit greasy, with a layer of fat floating on top. For reference, I do eat a lot of fast food; I usually dab off the excess fat from McDonald's sausage patties before eating them, but this was on the greasy side even for my taste.
The gumbo had a decent flavor and primarily consisted of chicken, sausage pieces (which I would prefer to have with a bit more spice), and okra. I noticed it didn’t have many other vegetables compared to other gumbos I've tried. I’m not sure if that's a positive or negative, but I thought it was worth mentioning.
The shrimp was delicious but also quite greasy, with a very fishy aftertaste. I understand that étouffée often uses seafood that’s a day old, but I suspect the shrimp might have been a few days old at the time. This might not be a significant issue for seafood lovers, but it was for me.
This was my first experience trying boudin, so my opinion might not be the best. I wasn't a fan, as the flavor was heavily dominated by thyme (and possibly sage). I enjoy herbs, but this was overwhelming, like having a bunch of herbs smashed into my soup. I might give it another shot if I return, but since I don’t know how boudin is typically supposed to taste, I’m not sure how relevant my opinion is.
The service was excellent, and everyone was very kind. I would definitely return if I’m ever in Vicksburg again. Although I would probably order different items next time, that’s more about my personal taste than an objective assessment of quality."
