Absolutely incredible wok hei—there’s so much of it! The flavors are deliciously savory, perfectly complementing the proteins on top. The vegetables are chopped into small pieces, making it easy to scoop everything up with a spoon in one delicious bite. If you can only order one dish, make it this one.
2) **Pork Dan Dan Noodles** (I added eggplant)
These longer noodles have a totally different appeal compared to the cat ear noodles. They’re cooked perfectly, somewhere between al dente and fully soft, giving them a wonderfully bouncy texture without being too tough. I loved the crispiness of the pork, and the thinly julienned veggies made it easy to pick up every bite with chopsticks! However, I must mention that this dish is incredibly salty—really, really salty. I struggled to taste the dan dan flavor as it was overwhelmed by the saltiness. I could only manage about half a scoop of the sauce with the noodles each time. Next time, I’ll definitely ask for less soy sauce and oyster sauce because, without the overwhelming saltiness, I know I could have devoured the entire dish! I also wished the eggplant had a bit more crispness; it was a bit mushy, which didn’t quite work with the crispy pork and chewy noodles."
