The timing of each course is impeccable, allowing you to savor every moment. Our culinary journey began with the Wood-Roasted Octopus, a dish that set the tone for the evening. The tender octopus, kissed by the wood-fired grill, was paired with a flavorful Mediterranean salsa verde that left us craving more. The Grilled Caesar Salad was a creative twist on a classic, with charred romaine hearts and smoky dressing that elevated this salad to new heights. The main courses at Red Ash are nothing short of extraordinary. The Wood-Grilled Ribeye was a carnivore's dream, perfectly cooked to our preference and bursting with flavor. The Fresh Pasta Carbonara, prepared tableside, showcased the chef's skill and precision, resulting in a creamy, indulgent delight. The Whole Branzino, grilled to perfection and served with a zesty lemon herb sauce, was a testament to the restaurant's commitment to using top-quality ingredients. And the Wood-Roasted Mushrooms Risotto was a symphony of earthy flavors, with creamy Arborio rice and a medley of wild mushrooms. Our dessert journey concluded with the Chocolate Budino, a decadent treat that struck the perfect balance between rich and sweet, making it an ideal ending to our culinary adventure.Red Ash boasts an extensive wine list and a selection of craft cocktails that complement the menu beautifully. We enjoyed a bottle of Italian red wine that paired flawlessly with our meal.Overall, Red Ash is a culinary masterpiece that combines the art of wood-fired cooking with Italian cuisine to create an unforgettable dining experience. "We went to dinner near the end of our stay in Maui and we have to say we wish we had eaten here early as the food and the staff were so good, we would have gone a few more times. When we arrived, we sat quickly after some COVID protocols. The waiter Suke came over and imagined, and it became better and better. Suke was clearly understandable with a warm and friendly arrangement. He made some great recommendations for meals and wine pairings. He explained how all foods were freshly prepared and the whole pasta on the menu in the house are handmade. The food came out efficiently from the kitchen where Matteo himself ran the show this night. The braided short rib and the Butternuss-Quash-Ravioli in a sage and butter sauce were sublimed while someone else in our group had one of the best Lasagna dishes he had ever had. The desserts were also delicious with a flourless chocolate cake that was so light and decadent that it melted into the mouth. The absolute star of dessert options, in my opinion, was Matteo taking his own on an Italian favorite, the Cannoli. The bowl was light, thin and fresh with almost one cripple cookie texture and a coconut cream filling that was one of the most delicious sweets we ever tasted. Last but not least, at the end of our meal, we noticed that Guy Fieri (Food Network Star) had visited and also left his stamp of permission on the wall. You need to visit Matteo when in the area, you will not be disappointed!"

"Left dissapointed a little upset.Entered loved the place. I wanted to have a great experience bring friends family back because I loved the indoor climate with the glass roof, etc. Giving you the outdoor feel. Unfortunately the service from the waitress/bottle girl manager were not pleasant.1. Despite the place being pretty empty, the waitress didn 't come to our table for over 10 minutes when we 1st arrived. We flagged down someone else to ask who would be our waitress.2. Food could 've been better more feeling. My friend ordered lemon pepper wings and those were the most 'blank ', seemingly lemon pepper I 've ever seen. She ate one, and sent them back. The fries were good. I had breakfast tacos (3) and they were okay but mostly just the flavor of cheese. I was still hungry after 3, like I never ate.We asked for the manager she came not ready to listen to a customer but ready to defend her employee which we figured. The waitress would dissappear for a long time we would see her talking to people behind the bar or at the hostess stand. She didn 't write down our order one plate came out completely wrong for my vegan friend. And we had to wait for her food to be remade. They didn 't want to accept my friends bank card thr manager made up some dumb excuse for the waitress.I could keep going about this place but to summarize, horrible customer service the food ain 't nothing you 'd crave or ever desire. Maybe the fries.Parking: There is a paid lot right across the street. It was $20 when we went on a Sunday. There is street parking further down the street near the more residential area."
