"However, during the car ride home, I began to feel unwell—just some symptoms of gluten exposure, not a full allergic reaction, thankfully. As a non-local visiting family, there were a few moments when I felt the waitstaff didn't take my gluten allergy seriously, even after I mentioned it. The staff was friendly and did bring out the pasta package about five minutes after we requested it on a slow Saturday, which I appreciated for their transparency about the ingredients.
What concerned me, though, was the delay and the giggling amongst the staff while they looked at our table; as someone who grew up in the Midwest, this raised a red flag for me. I found myself telling my in-laws that I’d deal with the stomach pains, gastrointestinal distress, and possible anaphylaxis, which is definitely a cause for concern. This may just be my personal experience or a moment of anxiety, but I wouldn’t recommend this place to out-of-towners with a severe gluten sensitivity, even though they do offer gluten-free options."
