"My fiancé and I spent less than 48 hours in Utah, and we ate food from Vessel Kitchen twice in those 48 hours. We are begging Vessel to open a spot in the Twin Cities, because we are obsessed with your flavorful, delicious, and creative food.We tried Vessel at our friend’s wedding last night. She had Vessel cater her wedding, and we were blown away by the kale slaw, mac and cheese, Thai carrots, and falafel. As vegetarians, we really appreciate inclusive fare, and Vessel fit the bill. It was the best wedding food we’ve had.We were told there was an airport location, so when we flew out this morning, we looked up Vessel, and we went there for breakfast. The breakfast bowls were hearty, fresh, and affordable. The flavors were insane, and we devoured the bowls. The coffee was also excellent, which was exciting, because we were generally disappointed by the coffee offerings in SLC.If Vessel were in Minneapolis, I’d go there multiple times per week for lunch. What a wonderful concept and incredible execution!"
