"Now, regarding that mystery ingredient: I understand that Schezwan Chicken Fried Rice is a fusion of Indian and Sichuan cuisines, and I've enjoyed this dish countless times in the past. However, I had never encountered cumin—especially in such generous amounts—in Schezwan fried rice before. It was evident that the chef opted to use Jeera Rice (cumin rice) as the base for this dish instead of the traditional white rice. I'm not sure if this decision stemmed from laziness or a lack of white rice, but it was disappointing nonetheless.
I ended up taking the dish home, where I prepared my own version. I sliced a chicken breast, added red pepper and Sichuan spices, and stir-fried it with some onions. Since I couldn't pick out the cumin from the rice, I had to work with what I had. For Mrs. Kumar's, I've included a picture of how Schezwan Chicken Fried Rice should truly be made.
