"I 'm grateful to have eaten in some amazing restaurants over the years...but I would include my evening at Sazon on a very, very short list of near perfect dining experiences. The service was impeccable, the presentation was precise I particularly enjoyed the tasting flight of mole sauces to start both as a way to inform your order but also to display the range of flavor, ingredient choice, and pairing possibilities from the chef 's signature sauce style. Most restaurants have a 'thing ' maybe it 's a starter or a dessert. Arguably, mole is that thing, but EVERY course starter, salad, main, dessert was incredible. We ordered the Xochimilco, which I learned is a corn fungus, and it was eye popping. Who would have thought? Chef Olea, apparently. I would return to Santa Fe just to dine at Sazon. I cannot recommend it more highly."
