"Almost lost hope I couldn't find a decent Vietnamese restaurant in Chinatown anymore. Especially a go-to spot for pho. Even brought my mom, the infamous taste tester with me to try it nonetheless. Final verdict is, the pho sampling passed with flying colors for us both. How can you tell a pho dish is decent? It's all in the broth before adding any toppings. That means no hoisin sauce, sriracha, lime juice, mint, and bean sprouts. She was right because that was the first level of testing. We both each ordered a specific bowl of beef pho. For me it was the medium rare beef slices pho (the pho thit thai). This one is where the beef slices are still raw but cooks instantly when bathing in the hot broth. Rippable, thick, and savory cuts on a bed of soupy rice noodles. Slurped the whole broth down to the last drop. There's no denying the broth passed and it was in fact my favorite part. Any pho lover and addict knows the broth is the heart of this dish that dedicates 8 hours of infusing flavors to its full richness. Want to come back to try other dishes and to order that excellent drip Vietnamese iced coffee again, which was also perfect and good amounts of caffeine ratio. Leave it to the condensed milk in that iced coffee to bring a nice sweet tooth ending."
