"My wife and I went on a very rare date (young kiddos) on 2/15/2022. Because of the rarity we're very particular and sensitive on what a good restaurant is. We ended up here, by chance, and it was very good luck indeed, because we came to find out that this is the best restaurant in Albany, Oregon (or really anywhere I've been in years). It is hands down better than any place in Corvallis or Salem. This establishment is a jem.The staff was very accomodating, we booked a reservation last minute and we were able to get a table in 30 minutes. Which gave us the perfect excuse to mill around town and decompress from our busy lives. There were even able to seat us early.Once we entered we noticed the atmosphere was warm and inviting. The music and decorations were charming, enough so that if I had the time I would have been happy to remain and hang out just for the atmosphere alone. The food was absolutely amazing. There's magic going on there because wow. I can't emphasize this enough: the chef was the a credit to all chefs everywhere, and If I was filthy rich, I'd hire this person as my personal chef. Please try the Sturgeon, if it's still on the menu. My wife had the rockfish and loved it.Our waiter, and I apologize because I can't remember his name, was kind, and welcoming. And he was a ninja with the water because my glass was alway full: I took a drink and looked away and it was full again: if I was a desert nomad I would have been in heaven. He was the perfect level of charming and available, and yet unobtrusive. My wife and I will be back and I believe we've found our new go-to restaurant in the next rare instance of a night out.Thank you Sybaris staff for your hospitality and delicious food and wonderful experience. And it gave us a wonderful date night, and a lasting good memory."

Had dinner there last week for the first time. Took a friend for her birthday. We had an exquisite dining experience! Service was so good, food was incredible. Had the chocolate hazelnut cake for dessert. It was sublime. I can’t wait to go back

Chef Matt Bennett has an incredible creative mind for creating and finding recipes. Janel Ackerman Bennett and her front of house staff are the best I have seen. just left a New Years Eve dinner, a packed house, that was run with precision and generous smiles behind the masks. a great and welcoming place to be. Amazing drinks, appetizers wait staff. Would not recommend for anything more than that. Almost 2hrs at the restaurant, food service from kitchen was very slow, food did not taste great, steak had burnt taste, horseradish mashed potatoes AMAZING, sea bass was very very fishy tasting, yes I get it was fish but there is a difference between fresh an something that tasted like it sat in the hot sun all day.

Absolutely delicious...all dishes were to perfection My husband and i just experienced the Valentine's Day special. Our stomachs are so satisfied with the first three courses that dessert will have to wait until later. We can not say enough about how tender the tenderloin in the Wellington was...and large pieces of Maine lobster...and very flakey crust. Everything was super. It was so nice and relaxing to experience a meal of this level while being in the comfort of our home with a crackling fire in the background.

Yet another delightful dining experience at Sybaris. My husband and I enjoyed the Irish toad in the bore, a flavorful dish featuring a Dutch baby pancake, house made sausage, Guinness gravy, and peas. It was absolutely fantastic! My mother-in-law had the butter roasted haddock, which she thoroughly enjoyed. We also shared a delicious starter of spinach-artichoke-red pepper dips. The chocolate chip mint cream brulee was the perfect ending to our meal. The service, as always, was impeccable. Our server, Jessie, made us feel like VIPs. Dining at Sybaris is always a delightful experience, with tasty bites and excellent service. View menu

Starting with the service, it was very nice. The workers really made an effort to provide us with good service, which I appreciated. They took care of us even when they ran out of a special appetizer. The drinks were amazing, and I believe if they opened a bar, it would be popular. The appetizer was a letdown, though not expensive at around $10 each, it did not meet my expectations. The entrees were average for the price. The desserts were great, not overly sweet, and I believe the ice cream was homemade. Overall, I would give this restaurant 3 stars. It's not that I hated it, but I think they can improve on the taste of their food.

I must apologize for not posting pictures, but everything at Sybaris Bistro was so amazing that we forgot to take any! Isn't that the ultimate goal of a restaurant experience? Our evening started when we were warmly welcomed by a friendly and helpful staff member, despite our early arrival from out of town for our reservation. He gave us some suggestions to pass the time before dinner, which was perfect. We were lucky to have the same person assist us throughout the evening, providing excellent drink recommendations and answering all our questions about the menu. The food was simply outstanding. From the appetizers to the main courses to the dessert, everything was perfectly seasoned and bal...

"We had requested the rounded corner booth in the main dining room and arrived 20 minutes early, planning to enjoy a cocktail at the bar. But instead, we were seated at a booth right next to our preferred one. A couple finished their meal shortly after we sat down, well before our 6:30 reservation. We ordered a Beefeater gin and tonic and a very dry Beefeater martini. Both drinks had an unusual, perfume-like scent that was quite off-putting. My wife sent her drink back, and I decided to switch to a Bombay martini, but the same strange floral fragrance persisted. I regularly enjoy Beefeater and Bombay dry martinis and have never experienced this odd aftertaste before. For my main course, the Duck and Porcini confit ragu had hardly any duck in it. There were only a few shreds of duck meat hidden in the tagliatelle, but no substantial pieces. My wife’s Pesto and Shrimp dish arrived swimming in a broth. While this might be a traditional way to serve it, there was no mention of broth on the menu. She had expected the pesto to be coated on the pasta and oily, rather than soupy. As much as we have loved Capriccio over the past three decades, this experience was disappointing. We didn't even stay for dessert. We'll certainly return, but I hope to avoid writing another negative review. I usually don’t share my thoughts unless absolutely necessary, but I felt compelled to do so this time."
