Their pull-apart croissant is by far the best croissant I’ve had outside of France. I don’t even like cinnamon and I ate the whole thing. Amazing. Probably the best bakery in LA.

I ordered the spinach and cheese pastry, and it was delicious! The area was also lovely. We had a great time strolling around and exploring the charming shops after enjoying our pastries.

I visited this place to try the Chocolate Espresso Cake featured on "Worth It," and it was delicious—exactly what I hoped for. A local recommended this bakery/cafe and it was a hit with my family. In fact my son said 'If I were a supervillain I would make Proof my headquarters and they would have to make me sandwiches all day long '. Seriously he won 't stop talking about the sandwiches, particularly the bread. The baked goods were all fantastic.

This has been one of my favorite places since I moved to the area. I had heard about it beforehand, but when I finally tried it, it didn’t disappoint. The coffee/tea area is awesome, the pastries are always fresh, the quiche/sandwiches blow my mind and I love that they sell other things as well. Definitely check them out around lunch if you want a great little sandwich on fresh bread.

Was my favorite bakery in SoCal for a while. (Luna Sourdough in Yucca Valley change me into a sourdough croissant lover). Haven't found the staff very welcoming and always find it annoying you can't really see the pastries til you're pretty much the one being waited on. Still, definitely solid pastries and coffee. Been a couple times to Proof Bakery, and easy to say my recent visit was the best! All the bakes were on point, lamination was beautifully done, and the canelé was pure perfection. The canelé is their signature item and you should absolutely get a couple for the road. The chocolate espresso cake was incredibly moist and 100% acceptable for breakfast (or so I tell myself). Also don’t leave without one of their chai shortbread cookies, it’s a stunner.

Service is great here, coffee is great, the pastries incredibly delicious. I personally enjoy the house-made granola they sell and taking it home to enjoy with a bit of almond milk. The coffee rotates with different roasters (Seattle Based Kuma Coffee or Unity Coffee to name a couple), so it's not common for the notes within the coffee to change, but they definitely know how to adapt and work with the constant roast cycle. The pastries made daily and throughout the day make for a case filled with goodies, that's if you've gone in before the crowd has gotten wind of the smell that lingers in the parking lot, which is in the back of the bakery. This popular worker-owned cooperative in Atwater Village truly excels at making pastries. Their croissants are impressive, earning high marks on my scale: flaky on the outside, moist on the inside, and rich in buttery flavor. They're a bit light and soft, but that’s my only minor critique. I've also enjoyed other items, such as the za'atar croissant, ham and cheese croissant, savory scone, and canelé, all of which have been delightful. However, after a few weeks of frequent visits to Proof, I found myself growing a bit tired of it.
